Toni Elling
Toni Elling lives on an old farmstead
in a beautiful rural setting in New York's
Schoharie Valley, where she launched her company, Meadowsweets.
Now operating from upstate and California, the business candies
various edible flowers used for decorating cakes and pastries.
Her flower products have appeared in many magazines and books,
including Ladies Home Journal, Martha Stewart Living, Gardens
Illustrated, Gourmet, and Williams Sonoma. She has also appeared
on Martha Stewart's television show. Take a look at her website www.candiedflowers.com
to see some luscious examples of crystallized roses, pansies,
cornflowers. It's "candy" for the eyes.
Toni
and daughter Liz were featured on the back cover of the August
'99 issue of Fine Cooking magazine, demonstrating the
fine art of crystallizing flowers. Toni traveled to Taunton Press
headquarters in Connecticut for the photoshoot and demonstration
of the intricate technique involved with candying various edible
flowers.
